When The Walt Disney World Resort opened in 1971, there was an awesome restaurant in Cinderella’s Castle named “King Stefan’s Banquet Hall” after Sleeping beauty’s father. For 26 years the name confused many people. Why would you name a restaurant in Cinderella’s Castle after Sleeping Beauty’s father? The reason was Cinderella’s father is never named and the imagineers wanted to name the restaurant after someone. On April 28, 1997 the restaurant was renamed “Cinderella’s Royal Table” and turned into a Character Dining Experience.
Here is the Turkey vegetable soup recipe from the bygone days of King Stefan’s Banquet Hall in Fantasyland at the Magic Kingdom.
Yield: 8 servings
1 cup onion, peeled, diced
1 cup carrots, peeled, diced
2 stalks celery, diced
2 quarts water
4 chicken bouillon cubes
2 cups leeks, peeled, washed, diced
1 cup potatoes, diced
3/4 pound turkey meat, cooked, diced
Clean, peel and dice onion, carrot and celery into 1/2 inch cubes. In a large pot, bring water to a boil. Add onion, carrots, celery, and bouillon cubes. Simmer for 30 minutes. Add leeks, diced potatoes, and turkey meat. Simmer an additional 10-15 minutes, or until potatoes and leeks are tender. Season with salt and pepper if necessary.
