In October, 171, the Walt Disney World Resort opened with its 3 original resorts; Disney’s Fort Wilderness Resort, Disney’s Contemporary Resort, and Disney’s Polynesian Village Resort. One of the unique experiences at Disney’s Polynesian Resort was the Luau Dinner experience at Luau Cove, now called Disney’s Spirit of Aloha Dinner Show.
Here is the original Polynesian Luau Chicken recipe from Disney’s Polynesian Village’s Luau Cove!
Yield: 4 servings
1 whole chicken (2-3 pounds)
1 tablespoon black pepper, ground
1 1/2 tablespoons garlic powder
1 1/2 tablespoons garlic salt
3 tablespoons fennel, ground
1 tablespoon poultry seasoning
3 tablespoons rosemary, ground
1 tablespoon curry powder
2 tablespoons onion powder
1 tablespoon Chinese five-spice powder
2 cups sugar
1 cup chicken base
Wash whole chicken in fresh running water. Pat dry and cut into 8 pieces (2 breasts, 2 legs, 2 wings, 2 thighs).
Combine all seasoning ingredients in a large mixing bowl. Sprinkle on chicken evenly and allow to marinate at least 3 hours, or overnight, if possible.
Preheat oven to 375 degrees.
Place seasoned chicken on a wire rack in a roasting pan. Bake for 20 minutes. turn down oven to 250 degrees and continue to bake for another 30 – 40 minutes. Chicken will be crispy and golden brown.
